In its early days, it was a stationary food trailer at Red River Brewing Company that was known for serving locally raised meat. The food from scratch concept was so popular that our family had to expand the kitchen - first to a 40-foot trailer inside the brewery, then to a brick-and-mortar dinner restaurant down the road. Today, the Fat Calf Brasserie serves French Southern fare in an intimate, casual setting.
