Laura Hoekstra is a registered dietician in Pediatric Nutrition at Mankato Clinic Children's Health Center on the Wickersham Health Campus.

Vanessa's clinical interests include diabetes, renal disease, chronic disease management, weight management, malnutrition, and intuitive eating. In her spare time, Vanessa enjoys walking, running, hiking, cooking, baking, canning, and spending time with family, friends, and pets. She want to expand her home garden and hopes to do more traveling in the future.

April Graff, MS, RD, LD, received a bachelor's degree from Minnesota State University, Mankato, in dietetics and Spanish and her master's degree from the University of Wisconsin-Stout in human nutritional science.
